A certain number of courses will appear in your dashboard by default in Canvas without you ever doing a thing. Once you reach the maximum number of dashboard courses (10 published and 20 unpublished, I believe), only the most recent ones will appear in your dashboard. Fear not! They are not gone! Some of your courses have just been removed from your dashboard.
You can always find a full listing of your courses under the Courses area of Canvas. You can get to it by clicking the "Courses" button on the global menu and then the "All Courses" link at the bottom of the Courses panel. See the screenshot, accompanying video and link below for further guidance.
